Mango and coconut bavarois: fresh, delicious and healthy dessert

Mango and Coconut Bavarois
This is Sara Sainthill birthday cake. Sara is a great source of inspiration in the kitchen and in life. She is yoga teacher, had an amazing life from Australia to Haarlem. But, above all Sara has this sparkling free spirit, this large empathic smile on your face that make you feel good at the first sight, this amazing energy she spreads over her students and friends. She really inspired this cake from her love for India flavors like coconut milk and mango. She also joined some of our Yummy, fun and healthy workshop, so I wanted something fresh, easy, healthy and delicious. Here it goes:

Ingredients for 6 friends:
- 200 gr. of coconut
- 100 gr. of coconut oil
- 1 white egg
- 250 gr. of mango
- 1 banana
- 400 ml of coconut milk
- 2 tbsp. of agave syrup
- 1 tsp of fresh grated ginger
- 1/2 tsp of turmeric powder
- 1/2 lemon juice and its peel
- 3 tsp. of agar-agar powder

Decoration: coconut flakes, fresh mango slices, pomegranate.

1/ First melt the coconut oil, and mix with the grated coconut and the white of the egg. Pour in a tin with a removable bottom, folded with some film. Press and let it cool in the fridge.

2/ Boil the coconut milk and add the agar-agar. Whisk for 1 minute and take of the heat.

3/ Prepare a kind of smoothie with 250 gr. of mango (you can use frozen mango), 1 banana, turmeric, the lemon juice and the coconut milk. Blend till smooth.

4/ Pour the mango smoothie on top of the coconut crust and let it cool for at least 30 minutes.

5/ Decorate the bavarois with some mango slices and pomegranate seeds and some coconut flakes. Enjoy!!!!

This is a rich and complex flavors of coconut and mango perfectly balanced with the freshness of the lemon as well as wonderful different texture. A great exotic dessert for summer!
