Surprising Rubarb and Prawns Appetizer

Rhubarb and prawns
Rhubarb is one of my favorite plant that is quite acid. It makes beautiful desserts, compotes, crumbles mixed with others fruits.

Today I get fresh rhubarb but already had my dessert ready, so I imagine this very nice appetizer served in an Asian spoon! I am so happy and surprised with the result, I want to share it with you and let you do it and try it as well!





Ingredients for 10 spoons:
- 150 gr. of rhubarb peeled, prepared and cut in dices
- 1 tbsp. of fresh diced ginger
- 1 tbsp. of acacia honey
- 10 prawns
- 1 tbsp. of raw sugar
- 1 tbsp. of soy sauce
- 1/2 fresh lemongrass thinly sliced
- 50 gr. of butter

In a pan, let the butter melt at slow heat with the dices of ginger then and add the rhubarb. Increase the heat till medium and stir during 5 minutes. Add the spoon of honey, stir 2 more minutes and stop. your compote is ready, let it cool down. Reserve.

In another fried-pan, put 1tsp. of olive oil and the slices of lemongrass at medium heat. Add the prawns and let it cook 5 minutes. Then add black pepper and the raw sugar and let caramelized. When it is getting golden, spread the soy sauce and stop. Reserve.





In a small glass (shot glass) or big Asian spoon, place the rhubarb compote in the bottom, and top it with 1 or 2 prawns. Add some thin slices of fresh lemon grass and serve. It will go perfectly with a fresh and fruity white wine like a Sauvignon blanc or a Gewurztraminer. I tried it with a 2009 white Rully from Joseph Drouhin cellar,...
