Strawberry Charlotte

Don't you feel the spring in the air? Do you feel sharing and caring your beloved this coming week of Eastern?

I am right now far away from Europe, enjoying some holidays, that I will share with you soon, but I wanted to give you some ideas for Eastern and hope you enjoy this special time of the year with your family and friends!
This is my Strawberry Charlotte, I am used to make,... it is really easy and quick! It is a very nice idea, fresh and tasty! Let's try it!
Ingredients for 4 persons:
  • 8 ladyfingers Biscuits
  • 250 grs. Of fresh strawberries
  • 10 grs. Of vanilla sugar
  • 1/5 Liter of vanilla ice
  • 4 tbs. of strawberry marmalade
  • 1 lemon juice

1/ Take out the vanilla ice and let at room temperature.

2/ Clean the strawberries and take off the stems. We reserve 10.

3/ Slice the rest of the strawberries in pieces, put in a bowl with the vanilla sugar and some drops of lemon juice, mix in a blender till you get a puree. Reserve it in the fridge.

4/ Take baking pan or a bowl that can suits for the Charlotte if you do not have a Charlotte mold. 

5/ Heat the marmalade till it gets liquid and add some juice from the strawberries-sugar-and-lemon mixture.

6/ Take the biscuits and drop them in the liquid and then line them in the mold in order to cover all the inner sides and bottom. They should just be quickly soaked in order they get soft but not melt totally. So it is just a quick bath and then you put them in the mold.

7/ Then, put a layer of strawberries, then a layer of ice, and repeat the operation till fill up the mold. Put a kitchen film on the top and put it in the freezer for at least 30 min.

8/ After this time, just before the service, take off the mold and put the charlotte on a plate, and decorate it with the fresh strawberries reserved before. 

Tip: If you have some strawberry mixture left, you can prepare a red fruit sauce that I already mentioned on this blog!
